Homemade Coconut Pistachio ice cream in 30 minutes
Ingredients
1 can of Organic coconut milk
about 30 (more or less if you like) of raw unsalted pistachios ground up into a fine powder
about 4 or 5 tsp Organic cane sugar
a couple of squeezes of Organic blue agave (any agave, maple syrup or honey will do)
1tsp Organic vanilla extract (NOT vanilla flavor)
Process
Blend sugar, vanilla and coconut milk together until sugar dissolves.
Mix in pistachio powder
Taste it ๐ if needed ad a squeeze or two of agave
Put in ice cream maker for about 30 minutes.
Place in a container and freeze.
Oh and don’t forget to eat the rest that is stuck in the ice cream container ๐ *If you want it to be creamier you can add a bit of organic whipping cream but not necessary.
